PINOY TOMATO CRABLET SALAD
FILIPINO RECIPE ~ TOMATO CRABLET SALAD ~
Perk up the usual tomatoes in vinaigrette by adding crablets. You not only end up with a beautifully present salad but you also get additional flavor and texture.
PINOY TOMATO CRABLET SALAD INGREDIENTS
200 grams crablets
Salt, pepper, and paprika to taste
2 cups oil
1/4 kilo cherry tomatoes, halved
1 tsp. chopped fresh basi
1 tsp. thyme
1/4 cup fried and crumbled bacon
VINAIGRETTE:
1/2 cup salad oil
1/4 cup vinegar or lemon juice
1 tsp. sugar
Salt and pepper to taste
1 tbsp. crushed garlic
1/2 tsp. Dijon mustard
1/4 cup chopped parsley
1 tsp. mint leaves, chopped
PINOY TOMATO CRABLET SALAD PROCEDURE
- Sprinkle the crablets with salt, pepper, and paprika. Fry in hot oil until brown and crisp. Set aside.
- In a bowl, combine the cherry, tomatoes, basil, thyme and bacon.
- Arrange on a platter. Top with fried crablets.
- Combine all the ingredients for the vinaigrette then drizzle over the salad just before serving.
