PINOY RECIPE ~ ROAST GUAVA CHICKEN ~
Stuff and roast chicken on a bed of ripe guava fruit, leaves and flowers for a new, exquisite flavor. The sweetness of the guava give the chicken a subtle fruity appeal.
PINOY ROAST GUAVA CHICKEN INGREDIENTS
1 kilo whole chicken
2 chicken bouillon cubes, crushed
1 dayap
Young guava leaves and flowers washed
6-7 ripe pink guavas, washed
1-2 tbsps. red wine
PINOY ROAST GUAVA CHICKEN PROCEDURE
- Season the chicken with bouillon and dayap juice. Fill the cavity with guava leaves, flowers and some of the ripe fruit. Halve a guava and rub all over the chicken.
- In a roasting pan, place more guava leaves and flowers. Put the chicken over this. Roast for 45 minutes to an hour or until the chicken is cooked. Strain the drippings and deglaze with red wine. Boil once then serve as gravy.
