PINOY QUAILS IN GABI LEAVES
FILIPINO RECIPE ~ QUAILS IN GABI LEAVES ~
Quails are not usual table fare but are quite tasty and easy to cook. Try this interesting recipe of stuffed quails wrapped in gabi leaves.
PINOY QUAILS IN GABI LEAVES INGREDIENTS
4 quails, cleaned and dressed
Oyster sauce
Soy sauce, salt and pepper to taste
5 pieces gabi leaves
1 tbsp. butter
2-3 pieces Chinese chorizo, sliced
1/2 cup raisins
1/2 cup sliced button mushrooms
2 cups rice
1/4 kilo bacon
1/2 cup red wine
1 cup chicken stock
1 tbsp. butter
PINOY QUAILS IN GABI LEAVES PROCEDURE
- Season the inside and outside of the quails with oyster sauce, soy sauce, salt and pepper. Set aside for about 30 minutes.
- Blanch the gabi leaves in boiling water then immediately refresh in cold water. Pat dry. In a skillet, heat the tablespoon of butter then saute the chorizo, raisins, and half of the mushrooms. Season to taste then add the cooked rice.
- Place the quails breast side down on a tray. Fill with the rice stuffing. Wrap the quails with slices of bacon. Spread a gabi leaf flat then put a quail at the center. Wrap to enclose. Do the same for all the quails. Place on a greased roasting pan and bake for 30 minutes or until quails are tender.
PREPARE SAUCE: In a pan, combine wine, chicken stock, remaining mushrooms, soy sauce, salt and pepper. Cook until thick and reduced. Add a tablespoon of butter. Serve with the stuffed quails.
