FILIPINO RECIPE ~ LUMPIA BICOL STYLE ~
PINOY LUMPIA BICOL STYLE INGREDIENTS
1 tsp. oil
1/4 kilo shrimps, peeled
1/4 kilo pork liempo, cubed
1 large onion, chopped
1 clove garlic, chopped
1-2 tsps. grated ginger
Salt and pepper to taste
12 pieces medium size gabi leaves
Banana leaves
1 1/2 cups of coconut milk
PINOY LUMPIA BICOL STYLE PROCEDURE
- Heat the oil then saute the shrimps, pork onions, garlic, and ginger until tender. Season to taste. Set aside. Wash and dry the gabi leaves. On each leaf place a small amount of the sauteed mixture. Roll up to enclose. Do the same for the remaining gabi leaves and filling.
- Line a palayok or saucepan with banana leaves. Pour in the coconut milk or kakang gata. Arrange the stuffed gabi leaves in a crisscross manner. Simmer until gata exudes oil and gabi is well-cooked. Serve with additional coconut milk, if desired.
