FILIPINO RECIPE ~ BOUILLABAISSE OF CHICKEN ~

A thick chicken soup which makes a good accompaniment to any fried food.

PINOY BOUILLABAISSE OF CHICKEN INGREDIENTS

1 tsp. oil
1 onion, chopped
1 cup diced, cooked chicken
1/4 cup chopped red and green bell pepper
1/4 cup chopped celery
1/4 cup butter
1/4-1/3 cup all-purpose flour
2-4 cups chicken stock
1 tsp. chopped kinchay salt and pepper to taste

PINOY BOUILLABAISSE OF CHICKEN PROCEDURE

  • Heat the oil then saute the onion, chicken, bell pepper, and celery. Set aside.
  • In a saucepan, heat the butter then add the flour. Cook for 2 minutes then gradually pour in the chicken stock.
  • Cook until slightly thick.
  • Add the sauteed chicken mixture and kinchay. Season to taste.

    Tried this minus the chicken, did Shrimp broth. for the meat, squid, crab, shells and shrimp. everything else stays the same. it was perfect. Thanks for giving an idea on how to create the sauce… More Power.

    a bouillabaisse is a seafood soup, if its not seafood then its not bouilabaisse call it something else
