FILIPINO RECIPE ~ BOUILLABAISSE OF CHICKEN ~
A thick chicken soup which makes a good accompaniment to any fried food.
PINOY BOUILLABAISSE OF CHICKEN INGREDIENTS
1 tsp. oil
1 onion, chopped
1 cup diced, cooked chicken
1/4 cup chopped red and green bell pepper
1/4 cup chopped celery
1/4 cup butter
1/4-1/3 cup all-purpose flour
2-4 cups chicken stock
1 tsp. chopped kinchay salt and pepper to taste
PINOY BOUILLABAISSE OF CHICKEN PROCEDURE
- Heat the oil then saute the onion, chicken, bell pepper, and celery. Set aside.
- In a saucepan, heat the butter then add the flour. Cook for 2 minutes then gradually pour in the chicken stock.
- Cook until slightly thick.
- Add the sauteed chicken mixture and kinchay. Season to taste.
